SaucePork Head MeatMakes:
1. Clean the pork head thoroughly and split it open from the mouth; clean the teeth with a brush and scrape off the tongue. Put it in cold water with erguotou and boil for a few minutes, then remove and drain.
2. Prepare green onion, ginger, and garlic.
3. In another large pot, bring water to a boil and add green onion, ginger, garlic, Chinese pepper, star anise, fennel seeds, old soy sauce, rice wine, a spoonful of sugar, then bring to a boil again. Add the boiled pork head, open the lid for 10 minutes, then cover and simmer on low heat for one and a half hours. Add salt halfway through.
4. Once cooked, do not rush to take it out; let it sit until the pot is warm. Remove the pork head when hot, lift off the bone with the meat still attached, then cover with plastic wrap and refrigerate. Cool before slicing and serving with sauce made of premium soy sauce and vinegar mixed with pepper and garlic.
