How to make sour cabbage stew with old tofu?

Slow-cook old tofu with sour cabbageand fermented chili.The ingredients: old tofu, sour cabbage, pickled peppers,soy sauce,salt,sugar,old dried chilli peppers,ginger,dried red chili peppers..Method for slow-cooking old tofu with sour cabbage:

1. Slice ginger into threads, chop dried chilies into grains, cut sour cabbage and tofu appropriately.

2. Heat oil in a wok, fry the tofu slices until both sides are golden brown, then remove and drain excess oil.

3. Leave some base oil in the pot, stir-fry the ginger, dry chili peppers, add sour cabbage and continue stir-frying, followed by old dried chilli peppers, then add soy sauce, water, pickled peppers and their soaking liquid, season with salt and sugar, bring to a boil, cook for another 5 minutes to extract flavors from the sour cabbage and pickled peppers, then place tofu slices in, and continue cooking over high heat.

4.
