How to make carbon-grilled fish:

1First, prepare the grass carp (cut open from the back; usually not cut from the belly as it is generally done for other types of grilling. Make some incisions on both sides of the fish for better flavor penetration, and marinate with salt, ginger, and scallions for about 20 minutes).

2 Chop up potatoes, onions, and black fungus; stir-fry them until eight-tenths done,

3 Use a fish tongs to place the fish on the grill. Start grilling from the inside of the fish first, then turn it over to cook the outside, brush oil after both sides are slightly heated. Brush the oil repeatedly while turning and cooking for several times.

4 After multiple rounds of brushing and grilling,the skinturns a bit crispy and golden brown. Now you can add other seasonings; spray with some cooking wine, flip the fish to apply it evenly, then brush soy sauce and five-spice powder on both sides.Soy sauceand five-spice powder should be sprinkled. The fish should have a crispy outside and tender inside when cooked.

5 Place the grilled fish in the center of a baking tray;lots ofchili peppers,a bit of red oil, pickled red peppers, garlic, ginger, and celery leaves, stir-fry them until fragrant and then pour over the fish.
