Seasonings: oil, salt,monosodium glutamate (MSG),soy sauce,,pepper powder,and cooking wine,fermented black beans;sauce;
Steps:
1. To avoid itching from the sticky fluid, wear disposable gloves to remove the outer skin of the yam, then wash and slice it into thick pieces.

2. Rinse the ribs and cook them for a moment in boiling water before removing them and setting aside.

3. Heat oil in the wok and addgingerslices to stir-fry until fragrant; then, add the ribs and stir-fry together.

4. Add the yam, an appropriate amount of soy sauce and cooking wine, stir-fry briefly, then add enough water, cover, and simmer for a while.

5. When half of the water has evaporated, add pepper powder, fermented black beans, and MSG, stirring to mix well.

6. Add the chopped green peppers and onions inside; use high heat to reduce the broth until it thickens slightly, then add a littlevinegarto taste; stir-fry evenly before serving.

Tips:
The sticky fluid of yams can cause irritation, leading to itching or even skin allergy upon contact. To prevent this, wash your hands with vinegar first or wear gloves when peeling the yam. The acidity of vinegar can neutralize the alkalinity of the sticky fluid.
