1. Clean the chicken and let it air dry for 2 hours.


2. Mix 5g salt, 10g salt-powdered chicken seasonings, and 30ML cooking wine, then rub evenly all over the dried chicken, inside and out.Food Network

3. Wrap the seasoned chicken in a plastic bag and refrigerate for one night.
4. Cut the ginger into slices, place them together with 120ML dark soy sauce, 150g brown sugar, and 500ML water in a wok.
