Sichuan Spicy Chicken preparation:
1. Cut the chicken into small pieces and place in a bowl, adding salt and cooking wine, mix well.
2. Heat plenty of oil in a wok until 80% hot, then add the marinated chicken pieces and fry until the surface turns dry and dark yellow, remove and set aside.

4.
