Olive oil fried small potatoes method:
1. Olive oil and small potatoes2. Wash the small potatoes and boil them for about 15 minutes.
They are done when a can easily pierce through the largest potato,

then remove and cool under cold water.

3. Gently flatten the potatoes with the back of a knife.

4. Pour olive oil into the pan.

5. Fry the small potatoes until both sides are golden brown, then remove them.

Tips:Potatoes smaller are more flavorful,
do not press too hard when flattening, as this may crush the potatoes,
