1. Clean the Pacific saury, cut into pieces.

2. Put in a wok and fry until slightly golden.

Tip

You can use any wok for frying the fish; there's no need for a grill pan. Do not discard the water that seeps out from the tofu; it adds great flavor when stewed. A stone pot is preferable, but regular pots also work just as well!
