American ginseng chicken soup

Ingredients

1. Wash the chicken thighs, drain them dry, cut into pieces and keep ready. Soak the black fungus in water, clean it thoroughly, then add ginger slices and stir-fry until the ginger turns slightly golden brown, then remove and discard.Goji berries (optional)Cleaned with a little water.

2. In the oil pan, put 2 tablespoons of vegetable oil, add the ginger slices, stir-fry until the ginger is slightly golden brown, then remove and discard.

5. Adding or not adding goji berries does not affect the taste; I add them in the last 10 minutes if needed.

Tips

Chicken thighs can be replaced with any chicken, but thigh meat has better texture. Notoginseng for homemade soup can also use its roots as a substitute.
