炮杖子
简介
炮杖子因形似鞭炮,故名炮杖子。是张掖市当地热门的特色小吃之一。
历史文化
随着蔬菜种类增多和面食做法的交流,在民间和街头餐馆中,也有面煮八成熟后,捞入炒勺,拌肉丝、寸段蒜台、葱丝、葫芦(蕃瓜)片及各种调味品爆炒面食的,所以又称干拌炮杖、炒炮杖、炒炮。也有煮熟后捞入事先勾兑好的肉菜汤中,称汤炮杖。
做法
将揉好的面拉开拉细,然后揪寸段于开水中煮熟捞出,用凉水激过,拌菜即食。
