白切三黄鸡
简介
广西平南县著名传统佳肴。素以鲜美、软滑、幼嫩、甘香等特色闻名。制作工序:选用约一点二五千克左右的平南三黄项鸡,宰杀后,取出内脏,再用生盐抹擦鸡身备用;将水烧至微开,将鸡放入煮三分钟后起锅置于盆中,并将煮鸡的开水倒入盆内盖好,约二十分钟即熟。然后用熟花生油均匀涂抹于鸡皮上,切块上碟。食用时佐以生晒酱油、葱花、芜荽等调料。
