猪里脊肉300克,芥蓝,盐、料酒、腐乳汁、胡椒粉、鸡蛋、淀粉、清油、葱、姜、清汤。
方法步骤
1.将里脊肉切薄片,用鸡蛋、淀粉、盐上浆。芥蓝洗净焯水。过凉待用。葱切段,姜切碎,腐乳汁加清汤调匀。
2.油锅上火烧至三成热,将肉片下油锅滑熟。锅底留油。爆香葱、姜,放入芥蓝煸炒。
3.加调料调味,出锅装在盘底。
4.炒锅上火,爆香葱、姜,倒入腐乳汁炒香,再放入肉片翻炒,出锅盖在芥蓝上即成。
