Steps to follow

1. Cut the tofu into appropriate-sized cubes, mince the pork, chop the scallions into scallion flowers, and chop the garlic into garlic paste.

2. Boil an appropriate amount of water in a pot, add a little salt, pour in the tofu blocks, blanch them, then remove and drain.

3. Heat the wok with oil until it is seven-tenths hot, then add the Sichuan pepper and fry until fragrant before removing it and adding the minced meat to stir-fry until the fat renders out.

4. Pour in the Pixian broad bean sauce, garlic paste, soy sauce, sugar, and salt. Add an appropriate amount of water and stir until well combined.

5. Pour in the tofu cubes and gently stir evenly, cover with a lid and simmer for 5 minutes.

6. Pour in the water starch to thicken the sauce, let the soup reduce to a thick consistency, then sprinkle with green onions.

Tip

1. Adding salt when blanching tofu can remove the beany odor and make the tofu firmer.

During the simmering of the tofu, try to minimize stirring with a spatula to prevent it from breaking; instead, gently shake the pot.

3. Add the tofu and warm water, cook over low heat for a moment, pour in the chili oil and Szechuan pepper oil, continue cooking for a moment, thicken with water starch, add remaining ingredients and seasonings.

Ingredients preparation

Main ingredients: 1 block of tofu, chopped pork 50 grams, 3 tablespoons of cooking oil, half a green onion, 1 red pepper, 2 tablespoons of garlic flakes, 1 cup of water.

Seasoning: 2 tablespoons doubanjiang, 1 teaspoon chili powder, 1 teaspoon soy sauce, 1 teaspoon shaoxing wine, 1 tablespoon sugar, 2 tablespoons cornstarch slurry (1 tablespoon cornstarch + 2 tablespoons water), a little black pepper, 1 tablespoon sesame oil.

Steps methodology

1. Cut the red peppers and scallions into circular slices.

2. Cut the tofu into small cubes, sprinkle with salt and place on a dry cloth to drain the moisture.

3. In a heatedflat-bottom panPut the garlic flakes and cooking oil in, stir-fry for a moment, then add the pork and spring onions to continue stir-frying.

Remove the doubanjiang and remove the moisture, then add it with chili powder, soy sauce, sake, sugar, and pepper into the pan. Gently stir-fry with the drained tofu, being careful not to break the tofu.

5. Add the clear water and sauce, then add pepper and sesame oil to complete it.
