Wash and peel the potatoes, cut into chunks, and chop half of the green onions into segments and half into small pieces, and set aside.2. Heat cooking oil in a pot, fry the potatoes until the surface is slightly golden, and set aside.3. Add star anise and chopped green onion segments in the remaining oil to sizzle, then add the fried potatoes.4. Add white sugar, salt, and soy sauce, and stir until evenly mixed, add a small amount of water and bring to a boil over medium heat.

5. After 2-4 minutes, turn the heat up high and thicken the sauce, add cornstarch to thicken, stir until cooked, and serve.
