Three-Cup Chicken WingsWing Preparation:

1. Rinse the chicken wings thoroughly and drain them clean.bloodwater, then pat dry and set aside for later use.

2. Place the chicken wings in a bowl and pour enough cooking wine over them to soak for more than half an hour (this is very effective for removing fishy smell; if you don't have cooking wine, you can substitute with cooking wine or beer). You can also prepare the chicken wings on the previous night by soaking them in the refrigerator covered with cling film.

3. Heat a wok over medium heat and add sesame oil. Once hot, place the drained chicken wings and fry until both sides are golden brown. Move the chicken to one side of the pan and add the sliced red onions and chopped green peppers; stir-fry until they release their fragrance.
