How to make braised pork with oil-soaked tofu puffs
1. Cut the rib meat into pieces. Heat a pot and pour in oil; wait until it is about eight-tenths hot, then add it to a wok and stir-fry until the color turns white. Add cooking wine, one clove of star anise, one tablespoon of dark soysauce, two tablespoons of light soysauce, and a bit of sugar. Stir evenly and set aside.
2. Pour in the bean curd puffsThe stir-fried meatin the oil; stir until they are soft, then remove and set aside.
3. Return the cooked meat to the wok, add boiling water, bring it to a boil, cover, and simmer for seven to eight minutes. Then add the bean curd puffs, cover again, and simmer for another four minutes. Remove the bean curd puffs and place them in a dish; cover the pot and continue cooking the meat for eight more minutes until the sauce has almost reduced. Pour it over the bean curd puffs before serving.
