How to cook Chinese pepper with sliced cow's liver:
1. Clean the cow's liver, cut it into pieces, and soak it in wine and shiitake mushrooms.
2. Boil water in a pot with salt, add oil, bring to a boil, then add the cow's liver; remove when the edges curl.
3. Add garlic to the pot, add more oil, and stir-fry until fragrant with shiitake mushrooms.
4. Mix scallions, ginger, sugar, salt, soy sauce, vinegar, starch, and water in a bowl.
5. Stir-fry Chinese peppers and shiitake mushrooms together, add doubanjiang, then place the cow's liver in the pot; stir-fry with the mixture for about 30 seconds before serving.
