Dragon shrimp risotto steps:
1. After thawing the dragon shrimp, boil it in hot water for 2 minutes. Chop the celery, onion, and garlic into fine pieces; rinse the rice and soak it for an hour.
2. Remove the heads of the shrimp and set them aside; remove the meat from the shrimp body and claws.


3. In a pot, add some oil and sauté the shrimp heads for 2 minutes. Add the chopped celery, onion, and garlic to stir-fry together. Add the tomatoes and tomato paste and stir-fry again. Pour in water and a bit of white pepper powder, then simmer for 15 minutes.Strain the broth to remove any residue.4. Cook the rice with the shrimp broth.
Reduce the amount of water compared to regular risotto cooking.Risottoshould be cooked over high heat first, then switch to low heat for 15-20 minutes. Stir frequently to prevent sticking.


5. When the rice is almost done and most of the liquid has been absorbed,add milk or cream and stir well. Add the shrimp meat and peas, along with salt and black pepper. Stir until the rice is nearly cooked through.6.|This completes the dragon shrimp risotto.
