Shang Tang Long Xia Yi Mian's ingredients: 2 lobsters cut into pieces, 2 large yi noodles, 3 cloves of garlic minced, 1 shallot minced,onion1/4 piece cut into pieces,butter3 slices, chopped green onion for garnish,chicken broth250ml, water 125ml, cornstarch 1 tablespoon, salt 1/2 teaspoon, sugar 1/4 teaspoon,
cornstarch slurry: 1 teaspoon cornstarch mixed with 1 tablespoon water
Shang Tang Long Xia Yi Mian's preparation method:
1. Boil a pot of water and cook the yi noodles until slightly soft. Drain them, rinse under cold water, and set aside.
2. Clean the lobsters, pat dry, and coat evenly with cornstarch.
3. Heat oil in a wok over high heat, quickly fry the lobsters until 50% cooked, then remove and set aside.
4. Heat the wok, add butter, gently sauté the onion, garlic, and shallot until fragrant. Add the lobster, chicken broth, and water. Cover and cook over high heat until the lobster is fully cooked. Then add the yi noodles to absorb the broth flavors before placing them on a plate.
5. Return the lobsters to the wok, add cornstarch slurry, cook until the sauce thickens, then top with the yi noodles and garnish with chopped green onions.
