Stone Mountain Braised Lamb Recipe:

1. Clean the lamb of its skin and fur, and place the whole piece in boiling ginger and scallion water until it is about 80% cooked. Remove and drain the water.

2. Heat a wok over high heat, add palm oil, and heat until almost smoking. Fry the lamb pieces in the hot oil until lightly golden, then drain in a colander and rinse with water to remove the oil.

Pour out the sauce and place the lamb in a serving dish. Mix with the reserved sauce, two tablespoons of cornstarch, and a little bit of fried sesame seeds and chopped green onions.
