1. After purchasing the clams, add a little salt or sesame oil and marinate for half an hour, then wash them with a brush.
2. Add water to the pot, add clams, scallion slices, and ginger slices, plus two tablespoons of cooking wine and one tablespoon of salt.
3. Bring to a boil over high heat, then skim off any foam. Remove the clams and drain.
4. Find a shallow bowl, arrange a circle of complete clam shells, and place the clam meat in the center.
5. Finely chop scallions, ginger, garlic, and dried chili peppers, and mix with soy sauce, vinegar, sugar, and sesame oil to create a sauce and pour it over the clams.
