Method

1. Cut the chicken into pieces, chop the green onions, slice the ginger. Heat an appropriate amount of oil in a pot.

3. Add sugar and stir-fry until melted. Then add rice wine and cook over high heat.

Tips

Rice wine is a very important seasoning and cannot be omitted.

Ingredient Preparation

1 whole chicken ( ),dried shiitake mushrooms15 pieces, 3 tablespoons of black sesame oil, 2 tablespoons of rice wine, 1 block of old ginger, appropriate amount of salt.Method

1. Slice the old ginger into thin pieces, remove the stems and tails, wash the internal organs, and cut into 3cm cubes.

2. Wash the dried shiitake mushrooms and soak them in warm water. Add 3 tablespoons of black sesame oil to the pot.

3. Add ginger slices and sauté over low heat until the ginger slices wrinkle. Then add the chicken and stir-fry.

4. Stir-fry until the chicken skin is golden and cooked, about 60% cooked, then pour in rice wine and stir-fry evenly.

5. Continue to add the chicken to a ceramic pot, add the shiitake mushrooms and the water from soaking the shiitake mushrooms, cover the pot and bring to a boil.

6. Then turn the heat to low and simmer for about 1.5 hours, then add salt to taste.

Tips

Be sure to use dried shiitake mushrooms. Also, use low heat when sautéing the ginger.
