四川麻婆豆腐的做法四
食材准备
嫩豆腐450克,牛肉末70克,蒜末、葱花各少许,食用油35毫升,豆瓣酱25克,水淀粉5毫升,蚝油、老抽、盐、鸡精、辣椒油、花椒油各适量。
方法步骤
1.嫩豆腐洗净,切块,入沸水锅中煮1分钟捞出。
2.锅注油烧热,倒入蒜末、牛肉末翻炒约1分钟,加入豆瓣酱、清水、蚝油、老抽、盐炒匀。
3.加入豆腐、辣椒油、花椒油小火煮约2分钟。
4.加入水淀粉勾芡,撒入部分葱花、鸡精炒匀,盛入盘中,再撒入剩余的葱花即可。
