酱烧茄子的家常做法
食材准备
茄子300克,蒜、香菜各适量。豆瓣酱、鸡精、盐各适量。
方法步骤
1.茄子洗净,去皮,切成滚刀块;蒜去皮,拍碎,备用。
2.锅置火上,放入油,烧热后,放入茄子块,稍加煸炒,再加入盐,煸炒至茄子呈金黄色且软烂,然后加入豆瓣酱继续煸炒,煸炒至茄子均匀裹上酱汁。
3.最后加入蒜末翻炒均匀,加入鸡精调味,撒上香菜即可。
小贴士
要选用色泽鲜嫩,颜色光亮,按压有紧实感的茄子。如果喜欢吃口味稍微清淡一点的可以将盐省略不放。
