1. Wash the onion and slice it; wash the chicken thighs and cut them into large pieces.

 

 

2. Heat olive oil in a pot, then add the onion slices and fry until they are translucent. Add the chicken pieces and stir-fry briefly before adding 1 tablespoon of North African spice mix, green olives, salted lemon, and dried apricots and peaches. Finally, add water to cook until it boils, then reduce heat, cover the pot, and simmer for 30 minutes untilthe chickenis tender and done.
