1.1 Place the tofu on a plate and cut it into pieces directly with a knife.There's no need to cut it on a cutting board.This avoids breaking easily.
2.2 Bring water to a boil, add a little salt, and blanch the tofu for about one minute. The purpose of this is to prevent the tofu from breaking during cooking.3.3 Heat oil in a pot, then sauté minced ginger and garlic, followed by adding the Pitai doubanjiang sauce and stir-frying until red oil is produced. Quickly add the tofu and stir-fry, without adding salt at this stage as the doubanjiang already has saltiness.
4.4 Just before serving, drizzle with a few drops of sesame oil and sprinkle with chopped green onions before serving.
