酱鸡胗的家常做法
食材准备
鸡胗500克,啤酒200克,酱油150克,红葡萄酒50克,精盐15克,白糖20克,葱段25克,姜片40克,调料袋(内装有桂皮、八角、花椒各8克,香叶、丁香、小茴香、豆蔻、白芷、砂仁各3克)1个,老汤2000克,香醋5克。
方法步骤
1.将鸡胗洗净,用刀切去筋皮。锅内加水烧开,下入鸡胗焯透捞出。
2.锅内加老汤、酱油、啤酒、红葡萄酒、精盐、白糖、葱段、调料袋、姜片、香醋烧开。
3.下入焯好的鸡胗,用小火酱至熟烂汤汁浓时捞出装盘即成。
