1 lb frog legs, 50g pickled chili, ginger,scallions,green onions,cilantro,pickling water, soy sauce,salt, sugar, flower wine, and appropriate amount of oil.Method

1. Wash and drain the frog legs, marinate with ginger and pickled chili, chop scallions and green onions for later use;

2. Add 1 teaspoon of salt, sugar, flower wine, and oil to the frog legs, mix well, and marinate for 10 minutes;

3. Heat oil in a pan, add the frog legs and stir-fry until slightly golden, then set aside;

4. In another pan, stir-fry pickled chili, ginger, and scallions, then add pickling water to the frog legs;

5. Pour in soy sauce, sprinkle with sugar and salt, and simmer for a while, then add cilantro and stir until cooked.

Tips

Frog legs are prone to parasites, so they must be cooked thoroughly.

Homemade Pickled Chili Frog

Ingredients

"Fo Jiao Tian Ji"

400g frog legs, 12 pickled chilies,

red bell pepper3,green bell pepper3,leeks(as needed), soy sauce, cooking wine,black pepper,sugar, salt, starch, scallions and ginger.Method

1. Wash and cut the frog legs, add cooking wine, soy sauce, black pepper, and salt, and marinate for 10 minutes, then mix with starch and marinate for a while;

2. Chop garlic, green bell peppers, and tomatoes, and cut ginger into slices. Prepare pickled chili;

3. Heat oil in a pan, add the frog legs and fry until golden brown, then remove;4. In the same pan, stir-fry ginger, garlic, and pickled chili, then add green and red bell peppers and stir-fry, then add pickling water;5. Add the fried frog legs and stir-fry until evenly cooked, then add cooking wine, soy sauce, and stir until cooked. Add garlic, salt, and sugar.

Tips

Remove the frog legs when they turn golden brown. Over-frying will make the meat dry and tough.

Simple Pickled Chili Frog

Ingredients

1 lb frog legs,

bamboo shoots

scallions, ginger, garlic,celery,pickled chili,sour beans,fermented bean curd,MSG,salt,light soy sauce, cooking wine,white pepper, starch.Method1. Add salt, MSG, light soy sauce, cooking wine, and white pepper to the frog legs, and marinate for half an hour;2. Chop scallions, garlic, celery, and sour beans, and cut ginger into slices. Prepare pickled chili;3. Heat oil in a pan, add scallions, ginger, and garlic, then add fermented bean curd, and add a sufficient amount of water, bring to a boil, then add pickled chili;4. Add sour beans, wait for the water to boil, then add sliced cucumbers, bamboo shoots, and finally add the frog legs and cook until done.Tips

Add pickled chili according to your preference. Remember to add the pickling water too.

Chicken, salt, MSG, soy sauce, Sichuan peppercorns, and cornstarch are mixed and marinated for 30 minutes.

Green onions, garlic, celery, and fermented bean curd are cut into segments; green onions, garlic, and ginger are chopped for later use.

Heat oil in a wok and stir-fry green onions, garlic, and ginger. Add chili bean paste, then add plenty of water and bring to a boil. Add half a packet of pickled chilies.

Add fermented bean curd, wait for the water to boil, then add diced cucumber, zucchini, and chicken. Cook until done.

Tips

Add pickled chilies as needed, and be sure to add the pickled chili juice.
