1. Remove the shrimp from the shell, wash and cut into small pieces;
2. Marinate with egg white and cornstarch for 20 minutes;
3. Add appropriate amount of flour to the egg, add water and knead into a dough;
4. Soak shiitake mushrooms and wood ear fungus, then cut into small pieces;
