2. Bring water to a boil in a pot, add the bitter melon and blanch it until it turns color.

3. Remove and cool with water, drain and chop finely, and arrange on a plate. Mince the garlic and set aside a spoonful of chili paste.4. Heat the oil in a pan, reduce the heat, and sauté the garlic until fragrant.5. Add the chili paste and stir-fry. Add soy sauce and sugar, and cook until it boils.6.
