1. Prepare the ingredients for chicken stew: spring onion, ginger, star anise, cinnamon bark.

2. Wash and soak the mushroom in warm water.

3. Chop a three-color chicken into large pieces.

4. Clean the chicken pieces.

5. Blanch the chicken pieces.

6. Make caramel color by adding oil, sugar, sauce, and stewing ingredients; cook over high heat then switch to low heat for about 1 hour.

7. Done! The fragrant chicken stewed with mushrooms is ready to eat.

Tips

It's best to use a clay pot for slow cooking on low heat for better flavor absorption.
